Chocolate Cake
It’s savory, has the right amount of bitter and sweet, and once you take a bite, you’ll be craving it for the rest of the day. It has a light, fluffy texture with a beautiful, creamy frosting, and some tart fruits on the top to sweeten things up(and to add the decoration to this beautiful creation). This dessert needs no introduction, it is simply a child’s dream(and also everyone else’s dream too)! Lo and behold, the CHOCOLATE CAKE!
Something that is AMAZING about this recipe is that the cake part is a one pot dessert, and very simple and easy to make. Everything comes together quickly and elegantly to make the ultimate chocolate cake of your dreams. Then the mousse is only 3 ingredients and compliments the cake so well, while the chocolate sauce is just an amazing finish to everything, and brings out all of the flavor of the delicious dessert. They all go together to make the best dessert ever.
STEPS
1. In a bowl, sift in the flour, cocoa powder, espresso powder, baking powder, and baking soda. Whisk it together until there are no lumps.

1. Make buttermilk by adding the vinegar into the milk and then stirring it for a few seconds, then leaving it to rest for 5 minutes.
2. Once the buttermilk has rested for 5 minutes, add it to the dry ingredients along with the melted butter, vanilla extract, eggs, and water.
3. Mix it all together until it is well combined.
4. Bake at 350 degrees fahrenheit for 50-55 minutes or until a toothpick inserted comes out clean.
5. To make the mousse, pour the heavy whipping cream into a large bowl and whip until soft peaks form. Then add the powdered sugar and whip it again.
6. Then, melt the chocolate in a separate bowl using 30 second intervals to check if it is melted, stirring after each time span is done.
7. Add some of the whipped cream into the melted chocolate after it cools down for a minute BEFORE adding it into the big bowl of mousse. This will prevent it from becoming lumpy.
8. Now, add the small mixture of chocolate and whipped cream into the big bowl. Whip everything together until stiff peaks form.
9. To decorate the cake, shave off the top of the cakes to make it flat. First, apply the mousse on the first layer of the cake. Then put the second layer on top of the cake, and add mousse on that too, then cover the rest of the cakes(including its sides) with the mousse.
10. To garnish the cake, add some strawberries to the top, and add some chocolate sauce to cover the top of the cake, and let it run down the sides of the cake to create a drip effect.

2 cups flour (sifted)
¾ cup cocoa powder (sifted)
1 ½ teaspoon baking powder (sifted)
1 ½ teaspoon baking soda (sifted)
1 teaspoon espresso powder (sifted)
¾ teaspoon salt
2 granulated cups sugar
½ cup melted butter (1 stick)
1 cup milk (room temperature)
1 tablespoon distilled vinegar or lemon juice
1 teaspoon vanilla extract
2 medium eggs (room temperature)
¾ cup warm water
Mousse
¾ cup chocolate (melted)
2 cups heavy whipping cream
2 tablespoons powdered sugar
Chocolate Sauce(optional)
1 cup sugar
3 tablespoons flour
⅓ cup cocoa powder
1 pinch salt
1 ¾ cup milk
1 teaspoon vanilla extract
3 tablespoons unsalted butter
Bake at 350 degrees fahrenheit for 50-55 minutes or until toothpick inserted comes out clean
